It is that time of the year once again with every day busier than the one before and this year, being Korsan’s 40th year of operation, we are planning to celebrate with a glass of something bubbly on 14th May as by then The Korsan Apartments and Suites, The Meze, ko.co, The Fish Terrace and 45 villas will all be up and running!
I have good news, our book keeper and Meze Waiter, Sadi, and our Fish Terrace Waiter, Mehmet Akif, are both back on the team this year. We celebrated Sadi’s retirement the summer before last and he headed off to Tokat, his homeland, but apparently Kalkan life is now in his blood and he and his family are happiest here so he is returning. We also sent Mehmet Akif off the summer before last to open his own restaurant in Uzumlu. The experience of running his own restaurant for a couple of years will have been a hugely beneficial one for him and we are thrilled at his return to Korsan this year. As for Yusuf in Meze … who knows! I have a feeling we will see him again at some point in the summer! We love the familiar faces, the Fish Terrace kitchen and front of house is the same as always and the Korsan Meze kitchen team remains the same, but we are also very happy to be introducing 6 new members to the service team this year … we look forward to getting to know them.
We have a few news items to report…. This year we will be adding another 5 bedroom property, Yesil Ev, to the Korsan property portfolio. Details and photos will be uploaded to our website soon once building works are complete.
We are very excited to report that we now have a proper office and we are no longer working from the cupboard which was our old one! Ibo and Seda are on the office team to help Claire and I, it is a new experience for us and an amazing luxury … we love it.
I think I mentioned in my previous blog that the renowned chef, Mark Hix, is a friend of ours and we will be incorporating a few of his recipes into the Meze and Fish Terrace menus for this summer. Prawn & Squid toasted bites, blackened sea bass and blue crab spaghetti are a few of the dishes we have in mind. www.hixrestaurants.co.uk
We have also updated and extended our villa catering menus and Ozay has a shiny new catering services vehicle.
New on the agricultural front, we are now growing our own lettuce, parsley, rocket and dill for use in all our Korsan salads … the first crop should be ready in mid-May. We aim to be as environmentally friendly as possible with our agricultural projects and so we are now the proud owners of 80,000 Californian red worms, which we are rearing to produce organic fertilizer for our crops. Apparently the worms multiply by 16 every twelve months so we will soon have a lot of baby Californian red worms to find new homes for!
The Meze and ko.co open on the 10th May and The Fish Terrace opens on the 13th, we look forward to seeing you.
